Rich 'n' Thick Hot Chocolate


Prep: 10 min., Cook: 8 min. This is a luxurious, unexpected offering for dessert. Take it over the top with a dollop of Marshmallow Whipped Cream. Find the chocolate bars on the candy aisle at the grocery store. Traditional hot chocolate recipes usually call for arrowroot as a thickener, but we used the more common cornstarch.


2 teaspoons cornstarch
4 cups milk, divided
2 (3.5-oz.) dark chocolate bars (at least 70% cacao), chopped
1/3 cup honey
1 teaspoon vanilla extract
Pinch of salt
Marshmallow Whipped Cream (optional)

1. Whisk together cornstarch and 1/2 cup milk until smooth.

2. Cook remaining 3 1/2 cups milk in a large, nonaluminum saucepan over medium heat until bubbles appear around edge of saucepan (about 4 minutes; do not boil). Whisk in chocolate, honey, vanilla extract, and salt until blended and smooth. Whisk in cornstarch mixture.

3. Bring milk mixture to a light boil, whisking frequently (about 4 minutes). Remove from heat. Let cool slightly. (Mixture will thicken as it cools.) Serve immediately with Marshmallow Whipped Cream, if desired.

Note: For testing purposes only, we used Ghirardelli Intense Dark Twilight Delight 72% Cacao dark chocolate bar.

Mexican Rich 'n' Thick Hot Chocolate: Prepare recipe as directed through Step 2, whisking in 1 1/4 tsp. ground cinnamon and 1 tsp. ancho chili powder with chocolate. Proceed with recipe as directed.

Orange-Almond Rich 'n' Thick Hot Chocolate: Prepare recipe as directed through Step 2, whisking in 3 Tbsp. orange juice and 2 Tbsp. almond liqueur with chocolate. Proceed with recipe as directed.

Note: For testing purposes only, we used Amaretto for almond liqueur.

Grown-up Rich 'n' Thick Hot Chocolate: Prepare recipe as directed through Step 2, whisking in 1/2 cup Southern Comfort with chocolate. Proceed with recipe as directed.



Yield: Makes about 4 cups (8 1/2-cup servings) (serving size: 1/2 cup)

I would have gone to bed when I was sick instead of pretending the earth would go into a holding pattern if I weren't there for the day.

I would have burned the pink candle sculpted like a rose before it melted in storage.

I would have talked less and listened more.

I would have invited friends over to dinner even if the carpet was stained, or the sofa faded.

I would have eaten the popcorn in the 'good' living room and worried much less about the dirt when someone wanted to light a fire in the fireplace.

I would have taken the time to listen to my grandfather ramble about his youth.

I would have shared more of the responsibility carried by my husband.

I would never have insisted the car windows be rolled up on a summer day because my hair had just been teased and sprayed.

I would have sat on the lawn with my grass stains.

I would have cried and laughed less while watching television and more while watching life.

I would never have bought anything just because it was practical, wouldn't show soil, or was guaranteed to last a lifetime.

Instead of wishing away nine months of pregnancy, I'd have cherished every moment and realized that the wonderment growing inside me was the only chance in life to assist God in a miracle.

When my kids kissed me impetuously, I would never have said, 'Later. Now go get washed up for dinner.' There would have been more 'I love you's' More 'I'm sorry's.'

But mostly, given another shot at life, I would seize every minute.look at it and really see it . live it and never give it back. STOP SWEATING THE SMALL STUFF!!!

Don't worry about who doesn't like you, who has more, or who's doing what
Instead, let's cherish the relationships we have with those who do love us.

i just spent a good 5 minutes deleting things from my mail. if i would just check every day it wouldn't get so unwieldy!










and no, whoever you are- i'm not dumb enough to believe i've won a lotto in the u.k. OR do i need a bigger penis- i'm happy not having been born with one-thank you anyway. i don't need to know how to" drive her wild in bed" i don't go that way- thanks again tho for the concern.(snark)

so i am promising myself to check in there once a day from now on.
i REALLY do not care about tiger woods. he and his family and the people involved in this whole thing should be entitled to their privacy. if for no other reason that it is the decent thing to let it be private. there are children involved BUT, EVEN IF THERE WERE NOT- PRIVATE LIVES SHOULD BE JUST THAT. he's a golfer for pity's sake.

The office vending machine, full of colorful packaging and shiny plastic wrappers, can be a diet minefield -- but it doesn't have to be. Sandwiched between the candy bars and giant bottles of soda, there are some healthy alternatives. As a nutritionist, I know it can be difficult to make the best snack choices when faced with so many sugary options, but my list of healthy alternatives will help you navigate the treacherous saturated fat-laden terrain that is the vending machine.

Crunchy Choices

Trail Mix
Sweet snacks like cookies and candy can provide a quick sugar fix but will leave you hungry, tired and jonesing for more. With a hefty dose of protein and heart-healthy fats, trail mix is a great substitute. Unlike sugary treats, a small serving of trail mix will keep your energy level up and your metabolism humming all morning long. Just be sure to watch portion size (even the small bags are meant for two) and choose unsalted varieties when possible. Good choices: Mr. Nature's Unsalted Energy Mix (approximately 265 calories, 14 grams fat, 8 grams protein) and Unsalted Trail Mix (approximately 244 calories, 12 grams fat, 8 grams protein).

Nuts
Nuts are also a winner. Look for unsalted, raw varieties. In addition to protein and healthy fat, nuts contain fiber, which will keep you satisfied until you can sit down to a proper meal. If you're watching your waistline, limit yourself to just a few. A two-ounce bag of Planter's peanuts has 332 calories and 4 grams of saturated fat. A better choice: a one-ounce bag of cashews (157 calories, 5 grams protein, and 10 grams heart-healthy fat).

Granola or Cereal Bars
For a midday snack, choose a granola or cereal bar with less than 150 calories and 5 grams of fat. With 7 grams of protein and 4 grams of fiber, Kashi TLC bars are the clear favorite (140 calories, 5 grams fat), but Nature Valley and Quaker both make healthy options too. For a chocolate fix, I love Nature Valley's Chewy Trail Mix Dark Chocolate & Nut bar. (Nature Valley chewy granola bars: 140 calories, 4 grams fat, 3 grams protein; Quaker chewy granola bars: 90 calories, 1.5 grams fat, 1 gram protein.) Nutrigrain bars are another smart choice (130 calories, 2 grams of fiber).

If you rushed out the door without eating breakfast, choose a granola bar with slightly more heft. Nature Valley Oats 'N Honey is made with whole grains and has less than 1 gram of saturated fat. Add a piece of fruit and a skim latte for a nutritious on-the-go meal.

Sweet Snacks

Raisinets
If you're hankering for candy and a granola bar just won't cut it, go for Raisinets. The chocolate-covered raisins provide a small amount of calcium and potassium and are relatively low in calories and fat. While a snack-size bag is a better choice than a candy bar, try not to make indulging a regular habit: Raisinets are still high in saturated fat (3.3 grams).

Animal Crackers Over 100-Calorie Packs
One-hundred-calorie packs of Chips Ahoy with -- you guessed it -- 100 calories (and 3 grams of fat) are a good alternative to regular cookies, but since they have little protein and fiber, chances are you'll be back at the vending machine before the hour is up. Next time, go for animal or graham crackers instead. Made with whole grains, these crunchy snacks have both fiber and protein.

Salty Options

Baked Chips
Be wary of bold claims: A bag of Chex Mix advertises 50 percent less fat than potato chips but is high in calories (210 calories), sodium (368 mg) and saturated fat (2 grams). Baked Lays, with only 125 calories and no saturated fat, are a far better choice (bonus points for 2 grams each of protein and fiber). Pretzels are okay in a pinch, but watch the portion size. A pack of minis or two large sourdough pretzels may be fat free, but it has the same number of calories (250) and more sodium (563 mg) than potato chips.

Beverages

When it comes to drinks, stick to water, low-fat milk, or unsweetened iced tea. A 15-ounce bottle of 100 percent fruit juice contains 220 calories and 48 grams of sugar, the same amount as a bottle of Coke. While the juice is high in vitamins A and C, the 12 heaping spoonfuls of sugar will give you pep -- and make you crash.
Caramel-Cloaked Chocolate-Hazelnut Torte


Notes: Make chocolate ganache first; let it cool while you bake the cake. Prepare cake through step 5 before starting caramel cloak. An accurate candy or instant-read thermometer that registers high temperatures is crucial to making the caramel; to coat cake evenly, it must cool just enough to be thick but still pourable, about 150°. Assemble torte through step 5 up to 1 day ahead and chill filled cake airtight; pour caramel over cold cake. Or complete entire recipe up to 1 day ahead and chill airtight; bring cake to room temperature to serve, about 1 hour, and warm sauce as directed in step 7.


2 cups hazelnuts (about 10 oz.)
6 large eggs, separated
1/2 cup sugar
3 tablespoons fine dried bread crumbs
1 tablespoon vanilla
Chocolate ganache (recipe follows; see notes)
Caramel cloak (recipe follows; see notes)

1. Place nuts in a 10- by 15-inch baking pan. Roast in a 350° regular or convection oven, shaking pan occasionally, until golden beneath skins, 10 to 12 minutes. Pour nuts into a towel and rub to remove loose skins. Let cool at least 15 minutes. Set aside eight completely skinned nuts. Whirl remaining nuts in a food processor until finely ground.

2. In a bowl, with a mixer on high speed, beat egg yolks and 1/4 cup sugar, scraping bowl occasionally, until very thick and light-colored, about 4 minutes. Stir in ground nuts, bread crumbs, and vanilla.

3. In a large bowl, with clean beaters, beat egg whites on high speed until they hold soft peaks. Gradually add remaining 1/4 cup sugar and continue to beat until egg whites hold short, distinct peaks, about 3 minutes total. Add half the whites to nut mixture and stir to blend well. Gently fold in remaining whites. Spread batter level in a buttered and floured 9-inch cheesecake pan with removable rim.

4. Bake in a 350° regular oven or 325° convection oven until cake is golden brown and springs back in the center when lightly pressed, 25 to 30 minutes. Let cool in pan for 10 minutes. Run a knife between cake and pan rim, then remove rim. Let cake cool on a rack about 45 minutes.

5. With a long, serrated knife, split cake in half horizontally. Gently slide a baking sheet under top cake layer and lift it off. Spread bottom cake layer evenly with chocolate ganache. Slide top layer, cut side down, back in place over ganache.

6. Set cake on rack in a 12- by 17-inch pan. Pour about 1 1/2 cups warm (see notes) caramel cloak over cake--enough to coat it--starting at the center and spiraling to edges, letting caramel drip down sides to cover completely. Arrange reserved hazelnuts evenly around top edge of cake. Let stand until caramel stops dripping and is firm enough to cut, about 30 minutes.

7. Scrape caramel drips from pan back into the measuring cup containing remaining caramel cloak. Cook, uncovered, in a microwave oven at 30% power, stirring occasionally, until warm and fluid, about 2 minutes. Pour into a bowl.

8. Place cake on a plate. Cut into wedges with a sharp knife. Offer remaining caramel cloak to spoon over portions.

Chocolate ganache: In a 2- to 3-quart pan over low heat, stir 8 ounces bittersweet or semisweet chocolate, chopped (about 1 1/2 cups), and 1 cup whipping cream until melted and smoothly blended, 8 to 10 minutes. Let cool, stirring occasionally, until ganache no longer flows when pan is tilted, 2 to 2 1/2 hours.

Caramel cloak: In a 3- to 4-quart pan, combine 1 cup each firmly packed brown sugar, light corn syrup, and whipping cream; 1/2 cup (1/4 lb.) butter; and 1/4 teaspoon salt. Bring to a boil over medium-high heat and stir occasionally until mixture reaches 240°, 12 to 14 minutes. Pour into a 1-quart glass measure and stir occasionally until mixture cools to 150°, about 25 minutes. Stir in 1 teaspoon vanilla. Pour over cake immediately.



Yield: Makes 8 to 10 servings
